Another crazy week! As much as I love the holidays and hate the gloom and doom a cloudy and snowy January brings, it is nice when the quiet, calmness returns to life, right?
For one, The Bachelor starts this week! YES! I have my wine bar fully stocked for this season. I know it’s shameful, but the love drama totally entertains me. Another perk of January: Serial Season 2! I am loving it so far. If you haven’t gotten into the world of podcasts yet, it’s time. As I’ve mentioned on the blog before, they are great to listen to when cooking, driving or cleaning. While most of my podcasts involve nutrition or cooking topics, this is where I deviate from my interests because Sara Koenig is really good at what she does, and I’m a sucker for a good mystery.
As always, here are your meals for the week. I truly believe that meal planning is an absolute KEY to living a healthy lifestyle. One of my favorite quotes is: “If you have good food in your fridge, you will eat good food.” So simple but true. If you stock cookies, chips, and ice cream as staples, and you come home from a hard day of work starving with no meal plan, of course, what do you think you will eat? If you have a well laid out plan with healthy, easy dinner options at your disposal, you will eat better. I promise!
Sunday- Slow Cooker Maple Chipotle Pulled Chicken + Alexia Fries+ Roasted Green Beans- For the Chicken I just substituted evoo for the coconut oil and omitted the chipotle chilis since I’m a wimp for spice.
Monday- Wegmans $6 Meals (to use up a coupon expiring on the 1st!)
Tuesday-Taco Tuesday: Bean Taco Salad (hers) + Beef Tacos (his)
Wednesday- Future Blog Recipe, stay tuned!
Friday- Oven Roasted Veggie Pizza (recipe x 2)- We had a few veggies go bad unfortunately, so I had to improvise, but it was still really tasty.
Saturday- My Vegetarian Bean & Quinoa Chili with whole grain bread for dipping
