Healthy Meal Planning: Weekly Dinner Menu #73 [Kitchen Renovation Edition]

There have been a lack of weekly dinner menu posts because I’ve been on strike a little bit.  It’s been 4 1/2 months so I feel like I’m entitled to this.  Lately we’ve been very thankful for Wegmans & Panera, I feel like I owe a good chunk of my happiness to those two places in the last few months! The good news is I am a day or two away from a working oven, and there is an end in sight!

This week we had a few good meals worth mentioning that were really easy.  Enjoy!

Sunday- Wegmans chicken quesadillas with three bean salad

Monday- Grilled pork loin (his) + Grilled Salmon Ciabatta Sandwiches (hers, YUM!) + penne mozzarella salad (courtesy of Wegmans) + spinach salad

Tuesday- One bowl microwave mac and cheese (recipe x 4 + pinch of dry mustard) with grilled veggies tossed in olive oil and balsamic (carrots, zucchini, bell peppers & broccoli)

Wednesday- Turkey Burgers with sides of chips and cherries

Thursday-Buffalo Chicken Taco Salad -yum! I also added avocado to mine.  Because, of course.

Friday- Slow Cooker BBQ Ribs with baked potatoes & bell pepper slices

Saturday- Grilled chicken (in honey mustard marinade) with macaroni salad and green salad
